How to cook sweet pilaf with dried fruit and honey

You will need
    • Pilaf with dried fruits and nuts:
  • 2 cups basmati rice;
  • 50 g light raisins;
  • 50 g dark seedless raisins;
  • 2 pcs. dried figs;
  • 50 g dried seedless cherries;
  • 50 g dried apricots;
  • 20 g almonds;
  • 20 grams of walnuts;
  • 20 g of pine nuts;
  • 5 tablespoons of liquid honey;
  • 30 g butter.
  • Sweet pilaf in pumpkin:
  • 1 medium sized pumpkin;
  • 1 cup rice;
  • 30 grams of prunes;
  • 30 g dried apricots;
  • 30 g of light raisins;
  • 2 sour apples;
  • 3 tablespoons of liquid honey;
  • 1 tablespoon brown sugar.
Instruction
Prepare crumbly pilaf, complementing the set of dried fruit with nut platter. Rinse the rice thoroughly and fill it with a double volume of water. Boil until cooked. Sift the cooked rice into a colander and rinse with cold water.
In a deep frying pan, heat the butter and two tablespoons of honey. Stir the mixture and pour the fruit and nuts into the pan. Fry the nut-fruit mass for about 5 minutes.Put the rice in the pan, mix and cook another 10 minutes. Remove the pan from the heat, cover it with a lid and let the pilaf brew for 7-10 minutes. Remove the lid, pour the rice with two tablespoons of honey and arrange the pilaf in portions.
Very beautiful and original dessert - sweet pilaf baked in a pumpkin. Wash a sturdy, medium sized gourd. Choose a fruit with walls of medium thickness - a thick-walled pumpkin is baked for too long, and a thin-walled one will not be juicy. Cut off the top and remove the inside with the seeds. Put the pumpkin with the cut off top on a baking sheet and bake in the oven until soft.
Sort and wash the rice, fill it with two glasses of water and cook until ready. Throw rice in a colander and rinse with running water. Wash dried fruits, cut dried apricots and prunes into large pieces. Fill the fruit with a small amount of boiling water.
Peel the apples and seeds and slice them. Heat oil in a pan, add sugar and some water. Put the apples and fry them until soft and transparent. Place the apple slices in the pumpkin. In the syrup remaining in the pan, put the dried fruit and cook them for 7-10 minutes. Pour rice into the pan and stir. Heat the mixture for another 5 minutes.Put the rice with fruit in a pumpkin and pour honey.
On a baking tray, place the stuffed pilaf pumpkin, pour in some water. Place the baking tray in the oven preheated to 180 ° C. Bake the pumpkin for about half an hour. Before serving, cover pilaf with pumpkin lid.
